„New” butchering, too, starts with archaic physical de-struction. Guiding the mechanized hand this leads -finally- to the systematical, machine-based de-construction of the natural resource (meat, bones etc.). Thus, the minced, meticulously ground organic substance becomes an industrial raw material, shapeable on demand. The latter is the actual field for innovations in the trade.
Auch das "Neue Metzgern" beginnt mit der Archaik physischer De-Struktion. Sie führt die mechanisierte Hand, um letztlich - und das ist das eigentliche Feld für Neuerungen - in die systematisch-maschinelle De-Konstruktion des Ausgangsstoffes (Fleisch, Knochen etc.) zu münden. Die zerkleinerte, minutiös gemahlene organische Substanz wird so zum - nunmehr beliebig formbaren - industriellen Rohmaterial.
